Homemade Gourmet OMP Burger

I made these onion mushroom pork (OMP) burgers as dinner few weeks ago. Everything was made from scratch except the cheese slices, tomato and cucumber. This meaty meal comprised mainly freshly baked hamburger buns and homemade burger patties made from 100% ground pork added with diced onion & fresh button mushroom. The patty was super juicy and externally crispy, thanks to the secret ingredient ~ cream crackers crumbs as a substitute for bread crumbs, which is unavailable in my kitchen, so STRETCH is my approach ~ make do with whatever I have.
I have documented my homemade gourmet OMP burger recipe as per below:


Hamburger Buns Recipe:
Basic sweet dough method
(Yield: 7 - 8 buns)
Ingredient A:
330g high protein flour
1/2 tsp salt
1 1/2 tbsp milk powder
60g castor sugar
Ingredient B:
1 egg
120ml water
10g instant yeast
Ingredient C:
40g butter
Ingredient D:
1 egg (for glazing)
Some sesame seeds
Steps:
Combined ingredient A together. Mix all ingredient B till frothy before adding unto ingredient A. Knead until a dough is formed. Add in ingredient C and knead till the dough is smooth and elastic to the touch.
Leave dough in a big bowl, cover with damp cloth in a warm place for 45 - 60 minutes.
Once the dough is doubled in size, scale dough at 85g portions and shape into smooth round balls. Cover with damp cloth and rest for another 45 minutes.
Glaze with beaten egg wash and sprinkle with sesame seeds.
Bake in a preheated oven at 180°C for 15 - 20 minutes. Cool well on wire rack.







OMP Patty Recipe:
(Yield: 7 - 8 patties)
Patty ingredients:
500g pork minces
1 onion - diced
2 fresh button mushroom - diced
1/2 cup cream cracker crumbs
1/2 tsp white pepper powder
1 tsp salt or to taste
Ingredient for coating:
Some plain flour
1 egg - lightly beaten
1/2 cup cream cracker crumbs
Steps:
Mix all the patty ingredients till well combine. Lift the mixture up and "throw" it a few times in the mixing bowl. Divide into 7 - 8 portions and make into patties using hamburger press. Make the patties at a thickness of 1 - 2 cm so that they cook through easily.
Let the patties chill and set in the fridge for awhile.
Prepare each of the coating ingredients in separated plates.
Take out the patties from the fridge. One by one, coat patties thoroughly in plain flour, beaten egg, and cream cracker crumbs.
Heat 2 tablespoons of oil in a frying pan. Pan-fry OMP patties over medium heat for 1 minute to seal in the meat juices, then flip over and pan-fry for another 1 minute until golden brown.


To complement these homebaked hamburger buns and homemade burger patties, caramelized onion and slices of cheese, tomato and cucumber were great companions to go with. However, you may assemble your OMP burgers to your preference.
